Itineraries

Guests arrive on Sunday and are served lunch and dinner, and the week’s itinerary begins on Monday. A typical day begins with full European-style continental breakfast, followed by the morning’s three-hour culinary lesson, during which the guests prepare their own lunch. Lunch is typically enjoyed on the main lawn of the estate. Then the guests depart for a professionally guided afternoon tour to one of the local sights, such as Pisa, Lucca, Pietrasanta, Viareggio, Lerici or Forte dei Marmi. Afterward they return to a multi-course dinner enjoyed by candlelight in the main dining room and paired with fine Italian wines carefully chosen for each dish.

During the week, guests learn how to prepare:
- Soffritto, the essential basis for many Tuscan sauces and bruschetta toppings
- Handmade pasta, including ravioli and gnocchi, plus risotto
- Pizza and focaccia from scratch, which are cooked in a traditional centuries-old wood-fired brick oven
- Desserts including tiramisù, gelato, sorbetto, biscotti, tarts and panna cotta
- Grilled vegetables, vegetable gratinée and eggplant parmigiana
- Salads and soups, including farro salad and ribollita soup
- Chicken infused with herbs and roasted, plus Tuscan-style chicken broth
- Bruschetta and more
